Most restaurants choose a wine to match their food. At Saint Urban, they do the exact opposite, designing their entire menu completely backward.
At most elite establishments, wine acts as a supporting character, but at Manhattan’s Saint Urban, Chef Jared Ian Stafford-Hill has flipped this traditional culinary hierarchy entirely on its head. A decade-old vintage cannot be altered, so the kitchen team designs its menu in reverse, building every dish around the immutable characteristics of the wine. Each month, the culinary team aligns their offerings with specific global wine regions and their corresponding seasons. In August, the bright profiles of the South of France inspire a menu rich with ratatouille and eggplant; by November, the focus shifts to Piedmont’s earthy white truffles, followed by Champagne and cold-weather shellfish in February.
Rather than treating their massive 3,000-bottle collection as a static showpiece, Saint Urban views it as an expansive palette of options that bridges the gap between grand hospitality and smart business. Pastry chef Sebastien Rouxel begins his creative process by isolating three core flavor profiles, meticulously constructing complex desserts structured to match the wine’s intrinsic notes. This highly collaborative, team-driven approach demands that the kitchen constantly innovate, ensuring chefs never repeat past menus. The result is an authentic, deeply immersive dining experience that honors the history of global winemakers and turns dinner into a cohesive, narrative journey.
